Curry Mac & Cheese

The Boy and I were craving Indian food the other night but we found out that our favorite Indian place has closed!! (BIG SAD FACE!) So after moping around for a while, we decided to make something with curry in it that was also very comforting and quick.

What better solution than my favorite mac & cheese recipe with curry?

1 pound medium shell pasta (you can use elbow macaroni if you wanna be traditional..I just feel the shells hold the sauce better.)

4 tbsp unsalted butter

4 tbsp flour

1 tsp salt

1/4 tsp pepper

2 – 3 tsp curry powder (or more if you’d like)

2 cups milk (I use skim to attempt to be healthy)

2 cup shredded cheddar cheese (sharp, please!)


  • Heat the pasta water as you start the roux. Cook pasta when the roux is thickening.
  • Melt the butter over low heat in a heavy bottom saucepan. Combine flour, salt, pepper, and curry separately.
  • Once the butter is completely melted, add the dry ingredients and whisk to combine.

  • Slowly add the milk while still whisking.
  • Increase the heat to medium-low, whisking often, allowing the roux to thicken.

  • Remove from the heat and add the shredded cheese.
  • Drain your pasta, do not rinse, and combine with the cheese sauce.
  • Enjoy the new flavor to your macaroni and cheese and admire the beautiful color! See? The ordinary everyday CAN become exotic with just a little bit of flair!

    it’s not the curry house is it?? i will be devastated!!

    good idea for curry, though. really…when isn’t curry a good addition? growing up, my dad used to make me curried scrambled eggs with cheese. might sound weird, but it’s delicious!
