Who likes bananas with peanut butter?

Then you’ll love these peanut butter banana muffins. Oh my god, they are gooey and just nutty enough to not over power the banana flavor…and if you have brown to black bananas in your refrigerator, this is the recipe for you. These are also the fluffiest banana muffins I’ve ever had, especially considering the heaviness of peanut butter. A perfect breakfast treat for Moominmamma’s visit!

Ingredients (12 muffins)

1 3/4 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3/4 granulated sugar

1/4 cup unsalted butter, softened

1/4 cup chunky peanut butter (trust me, you want to use all natural, chunk peanut butter)

2 eggs

3 large bananas, mashed (these should be brown to black)

1 banana, slice for garnish (this one should be quite fresh and ripe)


  • Preheat oven to 350F. Grease muffin tin (or line with muffin liners if you’re being fancy and bringing them somewhere).
  • In a small bowl, combine flour, baking powder, baking soda, and salt.
  • In another bowl, cream together sugar and butter until fluffy (about 5 minutes with an electric beater).
  • Beat in peanut butter.
  • Add in eggs one at a time.
  • Mix in mashed banana.
  • With the mixer on low speed, beat in the flour mixture until just combined (do NOT over beat or they won’t be fluffy and happy!)
  • Evenly distribute batter into the muffin cups. Top with sliced banana (*plop!*).
  • Bake 20 – 25 minutes or until a tester comes out clean.
  • Cool for about 5 minutes on a wire rack.
  • To be even more wicked, try them with a dollop of Nutella!

    My daughter will absolutely go bananas over these! Sorry for the awful pun…couldn’t resist. I really like how you artistically put the banana slice off to the side…so pretty.
