Apple Cider Doughnuts

OK – We all know that apple cider doughnuts are amazing. These? Are more than amazing. They are an epiphany. They are bundt shaped. They are mini bundt shaped. And we couldn’t stop eating them. We even got the cider locally at the farm where we apple and pumpkin picked!

Ingredients

makes about 24 mini bundt/doughnuts

Sugar & butter for prepping pans / Sugar & Cinnamon to coat doughnuts

2 cups flour

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1/2 tsp salt

2 tsp ground cinnamon

1 large egg

2/3 cup packed light brown sugar

1/2 cup apple butter

1/3 cup pure maple syrup (seriously – go for the good, natural stuff. no plastic taste, please)

1/3 apple cider (find local stuff! it’s always the best)

1/3 cup nonfat plain yogurt (I used my ever favorite Chobani 0%)

3 tbsp vegetable oil

NOTE: You will need a mini doughnut pan, mini bundt man, or regular size doughnut pan. I found a mini bundt pan at Walmart for under $10!

Directions

  • Preheat oven to 400F.

  • Spray doughnut pan with cooking spray (or grease with butter). Sprinkle with sugar and shake out excess.
  • In a mixing bowl, whisk together egg, brown sugar, apple butter, maple syrup, cider, yogurt, and oil.
  • Add dry ingredients and stir until combined.
  • Using a spoon, pastry bag (if you’re feeling ambitious – it’s actually the easiest/neatest way), or measuring cup to fill the pans halfway.
  • Bake for 11 minutes or until the tops spring back when touched lightly.
  • Mix equal parts of sugar and cinnamon. Roll the doughnuts in them as you take them out of the pan. Set on cooling rack to cool.
  • Make sure to re-grease and sugar the pan for each batch.

I’m trying very hard to not go downstairs and finish the leftover doughnuts that are sitting in my fridge…..must. resist. urge…..

  1. Those are my favorite doughnuts! Could you use a regular muffin tin?

      Yes I’m sure you could, although I’d definitely not fill them more than halfway (unless you want to increase the cooking time a bit). I was considering just using muffin tins before I found the bundt pan and was then just going to punch out little holes (just because I was obsessing with them being doughnuts!) = )
