Box Office Friendly Brownies – Vegan and Agave Sweetened

End of semester always comes upon us rather unexpectedly, especially since we don’t have finals in the box office…but we always have a little pizza party and farewell to some students. I decided to bring in some tasty baked goods which of course had to be sugar free and vegan and I stumbled upon this little gem of a recipe. Bizarre ingredients, yes, but fantastic results! We had a great time eating these and learning all about the summer program to come (although my stress dreams have already begun…) If you have a beloved vegan in your home, neighborhood, or office, try these out! They’re delish!

(makes 16 brownies) NOTE: I adjusted the flour and baking powder amounts to accommodate the extra liquid from the agave. If you’re using sugar you can reduce the flour to 3/4 cup and baking powder to 3/4 tsp!

3 oz. unsweetened baking chocolate

2 tbsp vegan margarine

1/2 cup pumpkin puree (homemade if possible)

1 cup agave nectar (in place of 1/2 cup sugar and 1/2 cup brown sugar)

1/4 cup unsweetened cocoa powder

2 tsp vanilla extract

3/4 cup unsweetened applesauce

1 cup whole wheat flour

1 tsp baking powder

1/2 tsp salt


  • Preheat oven to 350F. Line a 8″ square pan or 9″ circle pan with aluminum foil (leaving enough around the edges so you can lift the brownies out later).
  • Melt chocolate and margarine in a double boiler.
  • Add pumpkin puree, agave, cocoa powder, applesauce, and vanilla. Whisk together until smooth and creamy.
  • Sift whole wheat flour over the mixture and stir until fully incorporated.
  • Pour into the cake pan and smooth out.
  • Bake 35 – 40 minutes. Lift out of the pan and let cool on a wire rack.
  • Cut after they’re completely cooled and serve to your beloved box office crew!
