Red Velvet Cheesecake Brownies

Get ready for some sweets, courtesy of Valentine’s Day! I went into a baking frenzy the day before V-Day to bring in some treats for the box office and to make a little extra present for the Boy. I absolutely love Red Velvet cake and everyone has deemed it the most romantic kind of cake since it’s red…A little unfair if you ask me, but it’s so delicious I’m happy to make it at any opportunity! This recipe is a combination of Red Velvet brownies and cheesecake (something else I was craving for V-Day…We even considered driving an hour to go to the Cheesecake Factory but thought better of it since they don’t take reservations) and it is sooooo good. Very rich so you only need a little bite and also very beautiful to look at. Yay swirls!

Brownie Portion:
1/2 cup butter (1 stick)
2 oz dark chocolate, chopped
1 cup sugar
2 large eggs
1 tsp vanilla extract
1 1/2 tsp red food coloring (I finally broke down and bought a big bottle of red food coloring)
2/3 cup all-purpose flour
1/4 tsp salt

Cheesecake portion:
8 oz cream cheese at room temperature
1/3 cup sugar
1 large egg
1/2 tsp vanilla


  • Preheat oven to 350F.
  • Butter an 8″ metal baking pan, line with parchment paper (overlapping edges to make lifting the bars out later much easier), and butter the parchment. I had a makeshift 8″ pan – somehow I don’t have any square baking pans, so I just blocked a portion of my rectangular pans with beans. Thanks, Dad, for making me crafty.
  • For the brownie portion: Melt chocolate and butter in a double boiler or the microwave. Stir until smooth and let cool slightly.
  • Whisk together sugar, eggs, vanilla, and red food coloring.
  • Add chocolate mixture and stir until smooth.
  • Add flour and salt, stirring until just combined.
  • Pour into prepared pan and spread into an even layer.
  • For the cheesecake portion: Mix cream cheese, sugar, egg, and vanilla until smooth.
  • Distribute the cheesecake mixture over the brownie in eight big dollops.
  • Swirl with a knife or a spatula. (Swirls!)
  • Bake 35 – 40 minutes until the bars are set.
  • Cool on a wire rack and then remove bars from the pan using your parchment paper wings.
