Chocolate Chip Cookie Dough Truffles

I wanted to have an extra little surprise for the Boy on Valentine’s Day along with the two other little gifts I’d gotten him, so during my baking frenzy I found this recipe for cookie dough truffles. The Boy and I are both chocolate chip cookie fanatics and chocolate fiends, so I thought “what could be better?!” AND the original recipe suggests decorating the top with more mini chocolate chips so I came up with the idea of having little heart shapes on them. I even bought a little heart shaped box of (crappy store made) truffles, (ate those) and put in the ones I’d made him as an extra little flare. Just showing I care, ya know? But seriously, these are really easy to make and worth every second to show someone you love them.

(I halved the original recipe which makes 3 dozen. These are the original proportions)

8 oz. unsalted butter at room temperature (2 sticks)
1 cup light brown sugar
1 1/2 tsp pure vanilla extract
1 cup mini semi-sweet chocolate chips, plus more for heart decorations =)
3/4 cup unbleached all-purpose flour (basically, just always buy unbleached)
pinch of kosher salt (in a half recipe, I may not use kosher salt…)
12 oz milk or dark chocolate for melting (I used a mix of Ghirardelli Milk and very dark chocolates)


  • First thing’s first: Make sure there’s room in your freezer or fridge to store these flat for a while!
  • Cream the butter and sugar until light and fluffy.
  • Beat in the vanilla, flour, and salt until combined.
  • Fold in the mini chocolate chips. Make sure they’re well distributed.

  • Roll out 1″ balls and place on parchment lined baking trays and put them in the freezer for an hour.

  • Melt the chocolate over a double boiler or in the microwave and stir until smooth.

  • Skewer a ball with a toothpick and coat in chocolate (you may want to get some spoons involved to avoid the truffles crumbling and to make sure they’re truly covered).
  • Place back on the parchment paper and have someone ready to decorate with more mini chips.
  • Store in the fridge for up to 5 days or in the freezer for up to 2 months!

They go quickly, so you may want to make the whole recipe to show everyone the love ; )
