Cocktail Cupcakes – The Margarita

There’s one cocktail that always seems to come up when I see my girls.- the margarita. I know it’s Abbabee’s favorite! So when I found all the recipes that have popped up recently for a margarita cupcake, I figured this was a perfect opportunity to try them out. I personally am not a huge tequila fan, but hey, mix tequila with a buttercream and I think I can probably deal with it. The result? Unbelievable. The cupcakes are lime-y and fresh. The icing is the real star. At first you think “Ah, a normal buttercream” but after a few seconds the depth of the tequila hits you, the lime tickles you, and the salt surprises and amazes you. Most assuredly worth a try.

The cupcakes (makes 12)

1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
4oz/1 stick unsalted butter, room temperature
1 cup sugar
2 large eggs, room temperature
2 limes, zested and juiced
1/4 tsp vanilla extract
1/2 cup buttermilk, room temperature
1 tbsp tequila (for brushing tops if you want – I didn’t have the tequila in time for that step)


  • Preheat oven to 350F. Line or grease muffin tins.
  • Whisk together dry ingredients.
  • In a separate bowl, cream together butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the lime zest, juice, and vanilla.
  • With a mixer on low, add the dry ingredients, alternating with buttermilk, starting and ending with the dry. Beat until just incorporated.
  • Fill each muffin tine about 3/4 full.
  • Bake 20 – 22 minutes or until the cupcakes spring back when pressed.
  • Transfer the muffin tin to a wire rack and brush with tequila while warm. Let rest for 5 minutes then transfer cupcakes themselves to the wire rack.
  • Cool completely before frosting.

Tequila-Lime Buttercream

8 oz./2 sticks unsalted butter, room temperature
2 3/4 – 3 cups confectioners/powdered sugar
~2 tbsp freshly squeezed lime juice
2 tbsp tequila
2 pinches salt


  • Beat the butter on medium-high with a mixer until smooth.
  • Slowly add the confectioners sugar a little at a time with the mixer on low (so it doesn’t explode all over) until the mixture is smooth.
  • Add in the lime juice, 1 tbsp of tequila, and salt, then beat on medium until the frosting is light and fluffy, about 4 minutes.
  • Now you get to put your tastes to the test – add more tequila, lime juice, and salt to your taste. The amounts above are what I ended up with and it was delicious.
  • Frost the cupcakes and garnish with lime zest or a lime wedge.
