You know what’s amazing? Banana “ice cream”

I’ve seen probably a hundred recipes about banana “ice  cream” and I’ve always thought, “That’s cool” but brushed it aside. Since I’m sitting around a lot recently and happened to have a banana sitting around, I decided to try this one. In combination with my new favorite item (Smucker’s Natural Creamy Peanut Butter with Honey) it is amazing. The way that the frozen banana behaves is unbelievably like ice cream – it melts, it gives you brain freeze, it’s smooth. AND you can throw whatever you want into the mixture. AND this version is 145 calories per serving as compared to 200 for Ben & Jerry’s Froyo Half Baked – supposedly healthy-ish!)

Ingredients (makes enough for 2 scoops of ice cream)

1 banana

1 tbsp peanut butter (use my favorite if you can!)

1 tsp honey (I used creamed honey and tried to use it sparingly since the peanut butter already has honey in it)

1 tsp chocolate chips (I’d go for minis next time)


  • Slice the banana into medallions, put them in the freezer to freeze (takes about 2 hours).
  • Put the banana in a food processor and process to a crumble.
  • Add the honey and peanut butter and process until smooth. I used cream honey which was a bad idea because it became a frozen lump – try using squeezable honey!
  • Mix in the chocolate chips and put in a freezer-safe container. Freeze until solid.

Enjoy you’re freakishly healthy (and vegan) “ice cream”! Oh, and don’t forget to tick off one fruit serving for the day!
